It was not Stéphan PAROCHE’s destine to cook and yet... surrounded by his father’s cuisine, in 1997 he decided to join the family affair, “L’auberge des 2 tours” in Volonne, on the other side of the Durance. Success ensued and in 1998 the small business took over the “Relais Alpes Côte d’Azur” which had been closed for 10 years.
After a complete makeover, the renamed “Magnanerie” opened its doors on 26 January 1999. In 2004 Alain handed over the reigns to his son, Stéphan. Since then, Stéphan has amazed us with his cooking, mixing tradition and modernity with a twist to the classical Mediterranean dishes of our region.
Best LOGIS chef in 2007 and 2007 Business winner; disciple of Escoffier ‘cordon rouge’ in 2009; two toques in the Gault-Millau guide in 2010 and awarded Michelin Bib Gourmand in the 2011 guide, Stéphan has also appeared side-by-side with Carine AIGON in “Côté cuisine” and “Saveurs du sud” on France 3 television.
